It took me a while to use this enough to feel good giving an actual review. I'll work my way through everything I've learned in the process.
First of all, this is a substantial, serious piece of cooking gear. It's a bit heavy but it's exactly what you want to keep heat and give you what you need for a good cook. The size appears to be a bit larger than some of the other salt blocks I've seen on the market. It came well wrapped and protected. Ok…those were my initial thoughts.
Now to the important stuff, because no matter what it looks like, what does it do for you when it's time to put fire to food. I spent a good bit of time learning the ins and outs of using a salt block, preserving it, etc. I finally decided the time had come for a cook and chose some nice salmon filets as my first experiment, cooked in my smoker. I placed the salt block into the cold smoker and allowed the temp to come up to 230 degrees. This was to avoid "shocking" the salt block. I then put the salmon onto the block and used a remote thermometer to track the temperature. The block protected the fish from the direct heat and allowed me to not have to use a mat or anything. Bottom line is that the fish came up to temp much quicker than expected. Then came the taste test. Very good. I, of course, added some dry rub seasoning as well.
So, TLDR, this works exceptionally well. I like it a lot. It's very large and I think it will last for a while.
